Winner Winner Chicken Dinner

Sometimes life takes over and work consumes me; it's easy to come home and decide to make something fast.

Then I think...where is the fairness for my children? If I can spend 7 hours in the kitchen at work preparing 2 entrees, two sides, two veggies, AND prep for the next day, then why would I short change my family?

All it takes is a little bit of inspiration and a meal is set. So, today after working 5 am to 1:30 pm I asked myself what I could make for dinner that is both simple and tasty!

Here is what I came up with!

I grabbed some chicken drumsticks seasoned them with a dash of seasoned salt and popped them in the oven. I decided to cook them frozen because I find that as they thaw they release liquid which then helps cook them without drying them out and in a sense making a little bit of a stock as well.

I served them up with some jasmine rice and a simple salad consisting of lettuce leaves, arugula, cucumbers and tomatoes, it keeps the feel of summer alive.

For dessert I thought to hit the senses with some bread pudding! Now, I had some cinnamon buns saved up in the freezer and those were my well spiced and ready to use buns for our yummy bread pudding.

Everyone was happy. This meal only took us 1.5 hours from prep to plate! Rice cooker for the rice, aluminum disposable pan for the chicken, easy to wash salad bowl and disposable aluminum pan for the bread pudding! Nice and simple....and the best part about it was that nothing had to be babysat so we could enjoy some family time while we waited. Easy as 1, 2, 3!
